Chicken Gyros Recipe

  • Chicken marinade:
  • Combine the following into a bowl:
    • 1/3 cup Greek yogurt
    • 1/4 cup red wine vinegar
    • salt, pepper, cumin, paprika, oregano, coriander
    • Juice from half a lemon
    • 2-4 cloves of garlic
  • Mix 1 lb chicken thighs and let it marinate in the fridge for as long as you can depending on much you procrastinated on dinner.
  • Making the sauce:
  • Combine the following into another bowl:
    • 1/3 cup Greek Yogurt
    • 2-4 cloves of garlic
    • Dill (Save some for garnish)
    • 1/4 cup diced cucumbers & tomatoes (Cut 1/2 cup worth in total and save 1/4 for garnish)
    • Salt & pepper
    • A few dashes of white vinegar
  • Mix it all together and put it the bowl in the fridge
  • Cook the chicken thighs you marinated until the internal temperature is 165 degrees, then dice the chicken.
  • A few minutes before the chicken is done, heat up some pita bread in the oven or a different pan.
  • When all the pitas are done, spread the sauce on them first
  • Add the diced chicken
  • Add your remaining dill, 1/4 cup of diced cucumbers, tomatoes
  • Optionally wrap in foil to avoid a mess and enjoy!
