- Combine the following into a bowl:
- 1/3 cup Greek yogurt
- 1/4 cup red wine vinegar
- salt, pepper, cumin, paprika, oregano, coriander
- Juice from half a lemon
- 2-4 cloves of garlic
- Mix 1 lb chicken thighs and let it marinate in the fridge for as long as you can depending on much you procrastinated on dinner.
- Combine the following into another bowl:
- 1/3 cup Greek Yogurt
- 2-4 cloves of garlic
- Dill (Save some for garnish)
- 1/4 cup diced cucumbers & tomatoes (Cut 1/2 cup worth in total and save 1/4 for garnish)
- Salt & pepper
- A few dashes of white vinegar
- Mix it all together and put it the bowl in the fridge
- Cook the chicken thighs you marinated until the internal temperature is 165 degrees, then dice the chicken.
- A few minutes before the chicken is done, heat up some pita bread in the oven or a different pan.
- When all the pitas are done, spread the sauce on them first
- Add the diced chicken
- Add your remaining dill, 1/4 cup of diced cucumbers, tomatoes
- Optionally wrap in foil to avoid a mess and enjoy!
