As some of you may know, I was recently diagnosed with pre-diabetes. After finding out, I searched high and low for healthy meal options that are safe for pre-diabetes. Since I love sugar and carbs, it’s definitely been an adjustment! When I discovered this zero-carb pizza recipe from @Juliaericsonfit, I was so excited to give it a try. I’ve shared it a few times on Instagram and TikTok, but I wanted to post it here for anyone who doesn’t have TikTok or prefers a written copy. We’ve been enjoying this healthier, protein-packed pizza lately, and it’s super easy to make! I love that it keeps me full, helps lower blood sugar, and supports weight loss.
Ingredients:
- 1lb of Ground Chicken
- 1/4 cup of Parmesan Cheese
- 2 eggs
- Spray Avocado Oil
- 1/4 cup 0 Sugar Pizza Sauce (We used Frik & Frak Pizza Night Sauce. It was delicious and had no added sugars or preservatives)
- 1/2 of Mozzarella Cheese
- Organic Baby Spinach
- Turkey Pepperoni (We used Applegate Naturals Uncured Turkey Pepperoni)
Steps:
- Start by pre heating your oven to 425 degrees Fahrenheit.
- Make the crust by mixing together 1lb of ground chicken, 1/4 cup of parmesan cheese, and 2 eggs.
- Spray your pan with avocado oil and spread the crust out on pan.
- Bake for 20 minutes at 425 degrees Fahrenheit.
- Remove your pizza crust from the oven and add pizza sauce, cheese, spinach, and pepperoni. (add whatever other toppings you would like at this step).
- Bake for another 10 minutes at 425 degrees Fahrenheit.
- Garnish, slice, and enjoy!
