Spicy Teriyaki Pineapple Boats

Hi loves! 💛 I’m doing things a bit differently and posting a fun recipe my husband and I made a couple of weeks ago! I shared pictures of the final product on my Instagram Stories and had so many requests for the actual recipe so here it is!! 🙂 I hope you guys try this out because it is honestly SO good and doesn’t take too much time at all! Spicy Teriyaki Pineapple Boats

Total Time: 45 minutes

I N G R E D I E N T S

1 PINEAPPLE

RICE

1 cup water
½ teaspoon garlic salt
¼ teaspoon chili flakes
1 tablespoon butter (or you can use ghee!)
1 teaspoon sugar
1 cup rinsed white rice
For Texas-style, a few jalapeño slices

CHICKEN

2 cloves minced garlic
¼ cup soy sauce
¼ cup honey
3 tablespoons rice vinegar
½ teaspoon ground ginger
1-½ lb. diced chicken
2 teaspoons olive oil
A pinch of turmeric for health!
3 teaspoons of diced cilantro
3 teaspoons of sesame seeds (optional)

STEPS

Cut the pineapple in half lengthwise. Empty both halves of the pineapple into a separate bowl leaving about a half inch along the edges.Chop the scooped out pineapple and place 1 cup in a small pan.Add the water, garlic salt, chili flakes, butter, sugar, and jalapeños or any other spices to the pan, bring to a boil over medium heat.Add the rice and bring to a simmer. Then reduce heat to low and cook for 15-18 minutes, or until the rice is fully cooked.While the rice is cooking, combine the garlic, honey, soy sauce, rice vinegar, and ginger in a small bowl. I added a little bit of turmeric for health too! Add the chicken to the bowl and mix thoroughly while you heat up another pan.Heat up the olive oil in the new pan. Use a draining spoon or slotted spoon and remove the chicken from the bowl while reserving the sauce. Add the chicken to the pan and brown the chicken.When the chicken is fully cooked, add the sauce to the pan and cook until the sauce darkens and is thick. The sauce should completely cover the chicken. Garnish with cilantro or sesame seeds depending on what you like.Divide the chicken in half and place each half on one side of the hollowed pineapple. Fill the remaining half with the rice and serve!

    Okay this sounds and looks amazing! I had a salad inside a pineapple like this before and it was so good. I bet the teriyaki tastes amazing like this!
